Miso Katsudon

Ingredients

The katsudon

  • cup cooked rice
  • 1 piece Hirekatsu (pork cutlet)
  • to taste none salad leaves or shredded cabbage
  • to taste none sesame seeds (optional)

The miso sauce

  • 100 ml water
  • 2 tbsp miso
  • tbsp mirin
  • ½ tbsp sake
  • 2 tbsp sugar
  • 1 tsp dashi powder

Instructions

  1. Cook the rice according to the rice cooker instructions or follow the recipe for cooking rice without a rice cooker.
  2. Prepare the Hirekatsu by following the instructions for making tonkatsu.
  3. Combine all the miso sauce ingredients in a small saucepan and bring to a boil over high heat.
  4. Reduce the heat and simmer the miso sauce for about 8-10 minutes until thickened.
  5. Slice the cooked Hirekatsu into 2 cm strips.
  6. In a bowl, place some rice, drizzle with miso sauce, and top with cabbage and sliced pork.
  7. Pour additional miso sauce over the top and sprinkle with sesame seeds before serving.
