The miso sauce

Instructions
- Cook the rice according to the rice cooker instructions or follow the recipe for cooking rice without a rice cooker.
- Prepare the Hirekatsu by following the instructions for making tonkatsu.
- Combine all the miso sauce ingredients in a small saucepan and bring to a boil over high heat.
- Reduce the heat and simmer the miso sauce for about 8-10 minutes until thickened.
- Slice the cooked Hirekatsu into 2 cm strips.
- In a bowl, place some rice, drizzle with miso sauce, and top with cabbage and sliced pork.
- Pour additional miso sauce over the top and sprinkle with sesame seeds before serving.
