Omelette
Instructions
- Chop the chicken, onion, carrot, and capsicum into small cubes.
- Heat olive oil in a large frying pan over high heat.
- Add chicken to the pan and cook until fully cooked.
- Add vegetables and cook until the onion is translucent.
- Mix in ketchup and then add rice, coating it with the ketchup.
- Add thawed peas and season with salt and pepper, then remove from heat.
- In a small bowl, beat 2 eggs and heat a frying pan with olive oil.
- Pour in the eggs and scramble slightly without breaking the omelette.
- Add half the ketchup rice to the center of the omelette and fold the sides over.
- Flip the omelette onto a plate with the egg side on top.
- Repeat with the remaining eggs and ketchup rice, then serve.
