Yakimeshi (Japanese Fried Rice)

Instructions
- Mix the mayonnaise with the cooked rice in a small bowl.
- Chop the green shallots and bacon into small pieces.
- Heat olive oil in a frying pan over high heat and add the rice, frying for a few minutes.
- Move the rice to one side of the pan and scramble the eggs on the other side.
- Once the eggs are half cooked, stir them into the rice.
- Add the bacon and cook for about 5 minutes.
- Stir in the shallots and salt, then remove from heat.
- Sprinkle with pepper and serve.
