Hibachi Fried Rice

Ingredients

  • 3 large eggs
  • ½ tablespoon toasted sesame oil
  • to taste salt
  • to taste pepper
  • 2 tablespoons butter
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • 2 tablespoons avocado oil
  • 4 cups cooked white rice
  • 4 scallions sliced
  • 2 tablespoons soy sauce
  • 2 tablespoons mirin

Instructions

  1. Whisk together the eggs, sesame oil, salt, and pepper in a bowl.
  2. Combine the butter, garlic, and ginger in a separate bowl.
  3. Heat avocado oil in a large skillet or on a griddle over medium heat.
  4. Add the egg mixture to the skillet and cook until set, then chop.
  5. Add the rice and scallions to the skillet and stir fry for 3 minutes.
  6. Stir in soy sauce and mirin.
  7. Mix the chopped egg back into the skillet.
  8. Cook for an additional 2 minutes, then add the ginger garlic butter.
  9. Stir until the butter is melted and serve warm.
