Instructions
- Whisk together the eggs, sesame oil, salt, and pepper in a bowl.
- Combine the butter, garlic, and ginger in a separate bowl.
- Heat avocado oil in a large skillet or on a griddle over medium heat.
- Add the egg mixture to the skillet and cook until set, then chop.
- Add the rice and scallions to the skillet and stir fry for 3 minutes.
- Stir in soy sauce and mirin.
- Mix the chopped egg back into the skillet.
- Cook for an additional 2 minutes, then add the ginger garlic butter.
- Stir until the butter is melted and serve warm.
