Golden Fried Rice With Salmon and Furikake

Ingredients

The rice and eggs

  • 4 large eggs
  • 4 cups chilled cooked short-grain white rice

The cooking oil and seasoning

  • 5 Tbsp. vegetable oil
  • to taste Kosher salt
  • 1 tsp. sugar

The salmon and vegetables

  • 12 oz. skinless, boneless salmon fillet
  • 1 piece ginger, peeled, finely chopped
  • ½ small onion, finely chopped
  • 4 scallions white and pale green parts finely chopped, dark green parts thinly sliced
  • 3 cloves garlic, finely chopped

For serving

  • to taste Furikake

Instructions

  1. Separate egg yolks from whites and mix yolks with rice to coat each grain.
  2. Stir oil into egg whites and season lightly with salt, then cook in a skillet until gently set.
  3. Cook seasoned salmon in the skillet until golden brown and opaque, then set aside.
  4. Cook ginger and onion in the skillet, then add the rice mixture and season with sugar and salt.
  5. Add scallion whites and garlic, then combine all ingredients and cook until warmed through.
  6. Serve topped with furikake and scallion greens.
