Kimchi Fried Rice

Ingredients

The rice

  • 1 cup cooked rice
  • ½ tbsp Japanese mayonnaise
  • 1 egg beaten egg

The kimchi and protein

  • cup kimchi
  • 1.8 oz thinly sliced pork

The seasonings and garnishes

  • 1 tbsp chopped garlic chives
  • 1 tbsp sesame seed oil
  • 1 tbsp roasted white sesame seeds
  • ½ tbsp soy sauce

Instructions

  1. Chop the kimchi into smaller sizes and set aside with kimchi juice.
  2. Slice the pork to a similar size as the chopped kimchi and beat the egg in a bowl.
  3. Add Japanese mayonnaise to the cooked rice and mix well.
  4. Heat sesame seed oil in a frying pan over high heat.
  5. Add the sliced pork and cook until done, then add kimchi with juice and stir-fry until liquid evaporates.
  6. Move the pork and kimchi to the side, add the beaten egg to the center, and once half set, break it and add the rice.
  7. Stir-fry everything together until well mixed and rice grains are separated.
  8. Add garlic chives and sesame seeds, then season with soy sauce before serving.
