Kimchi Cauliflower Fried Rice

Ingredients

The main ingredients

  • 1 cup kimchi
  • 3 large eggs
  • ½ small onion
  • 2 cloves garlic
  • 2 cups cubed cooked chicken or leftover cooked meat
  • 1 small head cauliflower
  • 2 tablespoons kimchi juice
  • 2 tablespoons coconut aminos
  • 1 teaspoon toasted sesame oil
  • 2 scallions finely sliced
  • 1 sheet toasted nori
  • 1 tablespoon toasted sesame seeds

The cooking fat

  • 3 tablespoons avocado oil
  • to taste teaspoon kosher salt

Instructions

  1. Chop the kimchi and set aside.
  2. Whisk the eggs with salt in a bowl.
  3. Heat a skillet and add 1 tablespoon of avocado oil, then pour in the eggs to make an omelet.
  4. Cook the omelet until firm, then transfer it to a cutting board and slice into strips.
  5. In the same skillet, heat the remaining avocado oil and sauté the onion until softened.
  6. Add minced garlic and cook until fragrant.
  7. Stir in the chopped kimchi and stir-fry until browned.
  8. Add the cubed chicken and warm through.
  9. Mix in the riced cauliflower and combine well.
  10. Stir in the kimchi juice and coconut aminos, then cover and cook until tender.
  11. Adjust seasoning with salt, then remove from heat and stir in sesame oil.
  12. Mix in the egg strips and scallions, then serve garnished with nori and sesame seeds.
