Kimchi Cauliflower Fried Rice

Instructions
- Chop the kimchi and set aside.
- Whisk the eggs with salt in a bowl.
- Heat a skillet and add 1 tablespoon of avocado oil, then pour in the eggs to make an omelet.
- Cook the omelet until firm, then transfer it to a cutting board and slice into strips.
- In the same skillet, heat the remaining avocado oil and sauté the onion until softened.
- Add minced garlic and cook until fragrant.
- Stir in the chopped kimchi and stir-fry until browned.
- Add the cubed chicken and warm through.
- Mix in the riced cauliflower and combine well.
- Stir in the kimchi juice and coconut aminos, then cover and cook until tender.
- Adjust seasoning with salt, then remove from heat and stir in sesame oil.
- Mix in the egg strips and scallions, then serve garnished with nori and sesame seeds.
