Cauliflower Fried Rice

Ingredients

The base

  • 1 medium head Cauliflower
  • 2 large Eggs

The vegetables

  • 2 tbsp Unsalted butter
  • 2 cloves Garlic
  • ½ large Onion
  • ½ medium Red bell pepper
  • 3 medium Green onions

The seasoning

  • 2 tbsp Coconut aminos
  • 1 tsp Toasted sesame oil
  • to taste Sea salt
  • to taste Black pepper

Instructions

  1. Rice the cauliflower using a food processor or box grater.
  2. In a large pan, heat butter and sauté garlic, onions, and red pepper until onions are translucent.
  3. Whisk the eggs with salt and pepper, then push the veggies aside and scramble the eggs in the pan.
  4. Add more butter if needed, then add the riced cauliflower and stir-fry until tender.
  5. Remove from heat and stir in coconut aminos, sesame oil, and chopped green onions.
