Kimchi Fried Rice With Broccoli

Ingredients

The vegetables

  • 1 large head broccoli
  • 6 pieces scallions
  • 1 cup Napa cabbage kimchi
  • 4 cloves garlic
  • ½ piece ginger

The rice and sauces

  • 4 cups chilled cooked rice
  • 1 Tbsp. toasted sesame oil
  • ¼ cup soy sauce or tamari

The cooking ingredients

  • 3 Tbsp. vegetable oil
  • 4 large eggs
  • to taste kosher salt
  • to taste freshly ground black pepper
  • to taste sesame seeds

Instructions

  1. Separate the broccoli stem from the crown and slice the stem and crown appropriately.
  2. Cut the scallions into separate parts and keep them separate.
  3. Squeeze and chop the kimchi, returning the liquid to the jar.
  4. Heat oil in a wok and cook the broccoli and dark green scallion parts until charred.
  5. In the same pan, cook the kimchi, scallion whites, garlic, and ginger until fragrant, then add rice and sauces.
  6. Mix everything and let it crisp slightly before adding back the broccoli and scallion tops to heat through.
  7. Serve the fried rice topped with a fried egg, sesame seeds, and more kimchi.
