Instructions
- Bring a large saucepan of water to a boil.
- Pat the Mahi Mahi fillets dry and season with salt and pepper.
- Heat olive oil in a skillet over medium-high heat and cook the fillets for 3-4 minutes on each side until cooked through.
- While the fish cooks, add broccolini to the boiling water and cook for 5-6 minutes until tender.
- Remove the broccolini and place it in an ice bath to stop cooking.
- Serve the fish topped with chimichurri sauce alongside the broccolini.
