Mahi Mahi With Chimichurri Sauce

Ingredients

The fish and sauce

  • 2 filets Mahi Mahi
  • 1 Tbsp. olive oil
  • to taste sea salt
  • to taste freshly-ground black pepper
  • 1 bunch chimichurri sauce

The vegetables

  • 1 bunch broccolini

Instructions

  1. Bring a large saucepan of water to a boil.
  2. Pat the Mahi Mahi fillets dry and season with salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat and cook the fillets for 3-4 minutes on each side until cooked through.
  4. While the fish cooks, add broccolini to the boiling water and cook for 5-6 minutes until tender.
  5. Remove the broccolini and place it in an ice bath to stop cooking.
  6. Serve the fish topped with chimichurri sauce alongside the broccolini.
