Ingredients

Cajun Mahi Mahi

  • 1.5 lbs fresh Mahi Mahi filets
  • 1 tablespoon cajun spice seasoning
  • ½ tablespoon garlic powder
  • 2 tablespoons grape seed oil

Mango Pineapple Salsa

  • 1 cup fresh diced pineapple
  • 1 unit mango, finely diced
  • ¼ cup finely diced red onion
  • ¼ cup chopped fresh cilantro
  • 1 unit lime (juice of one, about 1–2 tablespoons)
  • to taste unit salt

Instructions

  1. Prepare the salsa by mixing diced pineapple, mango, red onion, cilantro, lime juice, and salt in a bowl.
  2. In another bowl, combine cajun spice seasoning and garlic powder.
  3. Pat the Mahi Mahi filets dry and season both sides with the cajun seasoning mix.
  4. Heat a skillet over medium-high heat and add grape seed oil.
  5. Sear the Mahi Mahi in the pan for 2-3 minutes on each side.
  6. Remove the Mahi Mahi from the skillet and let it sit for 1 minute to cool.
  7. Serve the Mahi Mahi topped with the Mango Pineapple Salsa.
