Instructions
- Prepare the salsa by mixing diced pineapple, mango, red onion, cilantro, lime juice, and salt in a bowl.
- In another bowl, combine cajun spice seasoning and garlic powder.
- Pat the Mahi Mahi filets dry and season both sides with the cajun seasoning mix.
- Heat a skillet over medium-high heat and add grape seed oil.
- Sear the Mahi Mahi in the pan for 2-3 minutes on each side.
- Remove the Mahi Mahi from the skillet and let it sit for 1 minute to cool.
- Serve the Mahi Mahi topped with the Mango Pineapple Salsa.
