Grilled Mahi Mahi Tacos

Ingredients

The fish

  • 2 lbs fresh Mahi fillets (de-boned)
  • 2 cloves garlic
  • ½ cup olive oil
  • to taste sea salt + freshly cracked pepper
  • 3 limes

The toppings

  • 1 plum tomato
  • ½ head red cabbage
  • 2 cups cilantro
  • 2 avocados
  • 1 cup Mexican crumbling cheese
  • 1 cup Crema Mexicana

The tortillas

  • 10 flour tortillas (or corn if you prefer)

Instructions

  1. Season the Mahi fillets with salt and pepper.
  2. Mix olive oil, lime zest, lime juice, and minced garlic in a bowl.
  3. Preheat the grill until very hot.
  4. Brush one side of the Mahi fillet with olive oil and place on the grill.
  5. Brush the other side with olive oil before turning and grill for 3 to 5 minutes per side until cooked through.
  6. Flake the cooked fish with a fork into nice-sized pieces.
  7. Prepare the cabbage slaw by slicing the red cabbage, adding diced tomato and cilantro, and seasoning with salt, pepper, and lime juice.
  8. Heat the tortillas on the grill for a few seconds on each side.
  9. Assemble the tacos with fish, slaw, Crema Mexicana, and Mexican crumbling cheese.
  10. Garnish with fresh cilantro, a lime wedge, and avocado slices.
