Ingredients

The fish

  • 2 lbs mahi mahi filets
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon ground cumin
  • ½ teaspoon dry cilantro
  • ½ teaspoon black pepper

The chipotle lime crema

  • ¾ cup plain Greek yogurt
  • 1 piece chipotle pepper
  • ½ teaspoon garlic powder
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon salt
  • 1 lime lime juice

The cabbage slaw

  • cups thinly sliced purple cabbage
  • 1 tablespoon lime juice
  • cup fresh cilantro
  • to taste salt

The mashed avocado

  • 3 pieces avocados
  • 1 tablespoon lime juice
  • to taste salt

The tacos

  • 16–20 pieces corn tortillas
  • to taste pico de gallo
  • optional jalapenos, lime wedge or fresh cilantro for garnish

Instructions

  1. Mix the spice rub ingredients in a small bowl.
  2. Pat the mahi mahi dry and rub the spice mixture onto the fish.
  3. In a food processor, combine the crema ingredients and pulse until well mixed.
  4. In a bowl, combine the cabbage slaw ingredients and mix well.
  5. Preheat the grill to medium-high heat and prepare the grates.
  6. Grill the mahi mahi for 2-3 minutes on each side, then remove.
  7. Warm the tortillas on the grill for 1 minute on each side.
  8. Assemble the tacos with grilled fish, cabbage slaw, avocado mash, and chipotle lime crema.
  9. Garnish with pico de gallo and any additional toppings before serving.
