Blackened Mahi Mahi Fish Burger

The Burger

fresh pineapple

Instructions
- Preheat the grill to medium-high heat.
- In a food processor, combine piquillo peppers, mayo, garlic powder, hot sauce, lime juice, and salt; set aside.
- Mix cajun seasoning and garlic powder in a small bowl and set aside.
- Pat the Mahi Mahi filets dry and season both sides with the cajun seasoning mix.
- Spray the grill grates with cooking spray or rub with olive oil.
- Grill the pineapple and Mahi Mahi, cooking each side of the pineapple for 4-5 minutes and each side of the Mahi Mahi for 3-4 minutes.
- Remove the grilled items and let them cool.
- Grill the buns inside part down for 1-2 minutes.
- Assemble the burgers with the bottom bun, 2 leaves of lettuce, Mahi Mahi, pineapple, optional pickled onions, and aioli on the top bun.
