Blackened Mahi Mahi Fish Burger

Ingredients

The Fish

  • 4 filets Mahi Mahi, skin removed
  • 1 tablespoon cajun seasoning blend
  • ½ teaspoon garlic powder

The Aioli

  • 2 roasted piquillo peppers
  • ¼ cup mayo
  • ¼ teaspoon garlic powder
  • 2 teaspoons fresh lime juice
  • 1 dash hot sauce
  • 1 pinch salt

The Burger

  • 4 thick slices fresh pineapple
  • 8 leafs green leaf lettuce
  • 4 whole wheat buns
  • optional pickled onions

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a food processor, combine piquillo peppers, mayo, garlic powder, hot sauce, lime juice, and salt; set aside.
  3. Mix cajun seasoning and garlic powder in a small bowl and set aside.
  4. Pat the Mahi Mahi filets dry and season both sides with the cajun seasoning mix.
  5. Spray the grill grates with cooking spray or rub with olive oil.
  6. Grill the pineapple and Mahi Mahi, cooking each side of the pineapple for 4-5 minutes and each side of the Mahi Mahi for 3-4 minutes.
  7. Remove the grilled items and let them cool.
  8. Grill the buns inside part down for 1-2 minutes.
  9. Assemble the burgers with the bottom bun, 2 leaves of lettuce, Mahi Mahi, pineapple, optional pickled onions, and aioli on the top bun.
