Blackened Mahi-Mahi with a Pineapple Lobster Sauce

cajun magic seafood seasoning or your favorite blackening seasoning

The Sauce

lobster meat

sweet peppers

pineapple

scallions

butter

tablespoons
orange juice

tablespoons
chicken or vegetable stock

teaspoon
chopped parsley for garnish
Instructions
- Preheat the oven to 350°F.
- Mix flour and blackened seasoning together and coat the top of each mahi-mahi fillet.
- Heat a sauté pan with olive oil and place the fillets seasoned side down, cooking for 2-3 minutes.
- Carefully turn the fillets over and sear the other side for 1 minute.
- Place the fillets in a baking dish with a little water and bake for 15 minutes.
- For the sauce, heat olive oil in a sauté pan and add lobster and peppers, sautéing until the lobster is almost cooked.
- Add pineapple, orange juice, and chicken stock to the pan and allow to reduce.
- Incorporate half of the chopped scallions and butter rolled into flour to thicken the sauce.
- Return the lobster to the pan to heat through.
- Serve the mahi-mahi topped with the lobster sauce and garnish with remaining scallions and chopped parsley.
