Instructions
- Preheat the oven to 350°F.
- Heat olive oil in a 9-inch cast iron skillet over medium heat.
- Sauté the diced onion for about 10 minutes until soft.
- In a large bowl, combine the whisked eggs, salsa, grated cheese, salt, and pepper.
- Pour the egg mixture over the sautéed onions in the skillet.
- Transfer the skillet to the oven and bake for 30-40 minutes until set.
- Remove from the oven and allow to cool for 10 minutes before serving.
