Instructions
- Preheat the oven to 375°F.
- Heat olive oil in a skillet over medium-high heat and sauté the onions and peppers until softened.
- Add the chorizo, beans, spices, and tomato sauce to the skillet and heat through.
- Grease a baking dish and layer half the tortillas, followed by half the pepper mixture and half the cheese.
- Repeat the layers with the remaining tortillas, pepper mixture, and cheese.
- Crack the eggs on top, season with salt and pepper, and bake until the eggs are set, about 30 to 40 minutes.
- Let cool for a few minutes, slice, and serve with desired toppings.
