Ingredients

The base

  • 2 tablespoons olive oil
  • 1 medium onion
  • 1 medium jalapeno
  • 1 medium green bell pepper
  • 1 medium red bell pepper
  • 6 ounces chorizo sausage
  • 1 15-ounce can pinto beans
  • 1 teaspoon oregano
  • ½ teaspoon salt
  • ¼ teaspoon cayenne pepper
  • 1 15-ounce can tomato sauce
  • 10 pieces corn tortillas
  • cups shredded Monterey Jack cheese
  • 10 large eggs
  • to taste salt and pepper

For serving

  • to taste sour cream
  • to taste avocado
  • to taste cilantro

Instructions

  1. Preheat the oven to 375°F.
  2. Heat olive oil in a skillet over medium-high heat and sauté the onions and peppers until softened.
  3. Add the chorizo, beans, spices, and tomato sauce to the skillet and heat through.
  4. Grease a baking dish and layer half the tortillas, followed by half the pepper mixture and half the cheese.
  5. Repeat the layers with the remaining tortillas, pepper mixture, and cheese.
  6. Crack the eggs on top, season with salt and pepper, and bake until the eggs are set, about 30 to 40 minutes.
  7. Let cool for a few minutes, slice, and serve with desired toppings.
