Ingredients

The cake

  • ½ cup soy flour
  • ½ cup coconut flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 tsp cornstarch
  • ¼ cup granulated sweetener of choice
  • ¼ cup coconut oil - measured then melted
  • ¾ cup milk of choice
  • ¼ cup liquid egg whites
  • ½ tsp vanilla extract
  • 1 tsp almond extract

The frosting

  • ½ cup plain Greek yogurt
  • 3 Tbsp powdered sugar
  • 2 Tbsp coconut flour
  • ¼ tsp salt
  • 2 Tbsp milk of choice
  • 1 tsp vanilla extract

The cookie dough

  • ¼ cup soy flour
  • 2 Tbsp coconut flour
  • ¼ tsp salt
  • 2 Tbsp granulated sweetener of choice
  • 2 Tbsp coconut oil - measured then melted
  • 1 Tbsp applesauce
  • 2 Tbsp milk of choice
  • ½ tsp vanilla OR almond extract
  • 2 Tbsp mini M&Ms

Instructions

  1. Mix the cake ingredients together until a dough-like consistency is achieved.
  2. Refrigerate the cake dough for at least 1 hour, preferably overnight.
  3. For the frosting, whisk together yogurt, powdered sugar, coconut flour, salt, milk, and vanilla until smooth and refrigerate.
  4. For the cookie dough, combine the ingredients and fold in the mini M&Ms, then refrigerate for at least 1 hour.
  5. Preheat the oven to 325°F and prepare a loaf pan.
  6. Bake the cake for 18-20 minutes and let it cool completely.
  7. Ice the cooled cake with the prepared frosting and top with cookie dough balls.
