Ingredients

The Cake

  • ½ cup soy flour
  • ½ cup coconut flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 tsp cornstarch
  • ¼ cup granulated sweetener of choice
  • ¼ cup coconut oil (melted)
  • ¾ cup milk of choice
  • ¼ cup liquid egg whites
  • ½ tsp vanilla extract
  • 1 tsp almond extract

The Frosting

  • ½ cup plain Greek yogurt
  • 3 Tbsp powdered sugar
  • 2 Tbsp coconut flour
  • ¼ tsp salt
  • 2 Tbsp milk of choice
  • 1 tsp vanilla extract

The Cookie Dough

  • ¼ cup soy flour
  • 2 Tbsp coconut flour
  • ¼ tsp salt
  • 2 Tbsp granulated sweetener of choice
  • 2 Tbsp coconut oil (melted)
  • 1 Tbsp applesauce
  • 2 Tbsp milk of choice
  • ½ tsp vanilla or almond extract
  • 2 Tbsp mini M&Ms

Instructions

  1. Mix the cake ingredients together until a dough-like consistency is achieved.
  2. Refrigerate the cake dough for at least 1 hour.
  3. Whisk together the frosting ingredients until smooth and refrigerate.
  4. Combine the cookie dough ingredients and fold in mini M&Ms, then refrigerate for at least 1 hour.
  5. Preheat the oven to 325°F and prepare a loaf pan.
  6. Bake the cake for 18-20 minutes and allow it to cool completely.
  7. Ice the cooled cake with frosting and top with cookie dough balls.
