Ingredients

Brownie Cake

  • ¾ cup coconut oil
  • 3 cups chocolate, chopped
  • cups sugar
  • 6 large eggs
  • 6 tablespoons cocoa powder
  • 9 tablespoons cornstarch

Cookie Dough Layer

  • 1 cup butter
  • 1 cup light brown sugar
  • cup sugar
  • 2 teaspoons vanilla extract
  • 2 tablespoons milk
  • 2 cups all-purpose flour, heat treated
  • 1 cup chocolate chips

Frosting

  • 1 cup chocolate frosting

Instructions

  1. Preheat the oven to 350°F (180°C) and grease three 8-inch cake pans.
  2. Melt the coconut oil and chocolate together in a microwave-safe bowl, then whisk in the sugar and eggs one at a time, followed by cocoa powder and cornstarch until smooth.
  3. Pour the brownie batter into the prepared pans and bake for 23-25 minutes until a toothpick comes out clean. Allow to cool completely.
  4. While the brownies cool, make the cookie dough by creaming together the butter and sugars, then adding vanilla and milk, followed by the flour and chocolate chips.
  5. Once the brownies are cool, layer them with chocolate frosting and half of the cookie dough mixture, then repeat with another brownie layer and top with remaining frosting. Refrigerate for 1 hour to firm up.
