Instructions
- Preheat the oven to 350°F (180°C) and grease three 8-inch cake pans.
- Melt the coconut oil and chocolate together in a microwave-safe bowl, then whisk in the sugar and eggs one at a time, followed by cocoa powder and cornstarch until smooth.
- Pour the brownie batter into the prepared pans and bake for 23-25 minutes until a toothpick comes out clean. Allow to cool completely.
- While the brownies cool, make the cookie dough by creaming together the butter and sugars, then adding vanilla and milk, followed by the flour and chocolate chips.
- Once the brownies are cool, layer them with chocolate frosting and half of the cookie dough mixture, then repeat with another brownie layer and top with remaining frosting. Refrigerate for 1 hour to firm up.
