Ingredients

Cookie Dough

  • 2 and 1/4 cups heat-treated all-purpose flour
  • 2 and 1/4 teaspoons cornstarch
  • 3/4 teaspoon salt
  • 3/4 cup unsalted butter
  • 1 cup packed light or dark brown sugar
  • 1/3 cup pasteurized egg whites
  • 2 teaspoons pure vanilla extract
  • 1 cup mini semi-sweet chocolate chips

Buttercream

  • 1 cup unsalted butter
  • 2 teaspoons pure vanilla extract
  • 1 Tablespoon heavy cream or milk
  • 1 teaspoon salt
  • 3 cups confectioners’ sugar

Instructions

  1. Prepare the cookie dough by mixing the heat-treated flour, cornstarch, and salt in a bowl.
  2. In a separate bowl, beat the softened butter until creamy, then add brown sugar and mix until fluffy.
  3. Incorporate the egg whites and vanilla extract into the butter mixture.
  4. Gradually add the flour mixture and mix until combined, then fold in the chocolate chips.
  5. Chill the cookie dough while you make the buttercream.
  6. For the buttercream, beat the softened butter until fluffy, then add vanilla, milk, and salt.
  7. Gradually add confectioners’ sugar and mix until light and fluffy.
  8. Break the cookie dough into chunks and mix into the buttercream until just combined.
  9. Use the frosting immediately or store it in the refrigerator or freezer.
