Ingredients

The base

  • 4 medium red potatoes
  • 1 can black beans
  • 1 can diced tomatoes
  • 2 cups shredded mozzarella cheese

Toppings

Instructions

  1. Dice the potatoes and toss them in olive oil and taco seasoning.

  3. Combine black beans, diced tomatoes, and additional taco seasoning in a bowl.
