Pressure Cooker Grass Fed Beef Back Ribs

Ingredients

The ribs

  • 1 rack grass fed beef back ribs
  • ¾ cup water
  • 4 ounces unsweetened applesauce
  • 2 tablespoons coconut aminos
  • 1 teaspoon fish sauce

The seasoning

  • to taste dry rub of choice
  • to taste kosher salt

Instructions

  1. Pat the beef back ribs dry and season both sides with dry rub and kosher salt.
  2. Wrap the ribs in foil and marinate for at least 2 hours or up to a day.
  3. Preheat the broiler with the rack positioned 4-6 inches from the heating element.
  4. Cut the marinated ribs into pieces to fit in the pressure cooker.
  5. Broil the ribs for 1-2 minutes on each side until charred.
  6. In the pressure cooker, combine water, applesauce, coconut aminos, and fish sauce.
  7. Add the ribs to the pressure cooker and lock the lid.
  8. Cook on high pressure for 20 minutes, then let the pressure release naturally or quickly.
  9. Remove the ribs and place them back on a wire rack.
  10. Simmer the cooking liquid until reduced to 2 cups, adjusting seasoning as needed.
  11. Baste the ribs with the cooking liquid and broil for about a minute to crisp up.
