Pressure Cooker Grass Fed Beef Back Ribs

The seasoning

Instructions
- Pat the beef back ribs dry and season both sides with dry rub and kosher salt.
- Wrap the ribs in foil and marinate for at least 2 hours or up to a day.
- Preheat the broiler with the rack positioned 4-6 inches from the heating element.
- Cut the marinated ribs into pieces to fit in the pressure cooker.
- Broil the ribs for 1-2 minutes on each side until charred.
- In the pressure cooker, combine water, applesauce, coconut aminos, and fish sauce.
- Add the ribs to the pressure cooker and lock the lid.
- Cook on high pressure for 20 minutes, then let the pressure release naturally or quickly.
- Remove the ribs and place them back on a wire rack.
- Simmer the cooking liquid until reduced to 2 cups, adjusting seasoning as needed.
- Baste the ribs with the cooking liquid and broil for about a minute to crisp up.
