Instant Pot Ribs

baby back ribs or spare ribs (about 1½ to 2 pounds)

Homemade Barbecue Sauce or store-bought sauce, plus additional for serving
The Rub

Instructions
- Rinse the ribs and pat them dry, removing the membrane if present.
- Mix the dry rub ingredients in a bowl and coat the ribs generously.
- Place the trivet in the Instant Pot and add water, apple cider vinegar, and liquid smoke.
- Stand the ribs on the trivet, wrapping them around the pot if needed.
- Seal the Instant Pot and cook baby back ribs on high pressure for 23 minutes or spare ribs for 35 minutes.
- Allow the pressure to release naturally for 5 minutes for baby back ribs, or completely for spare ribs.
- Preheat the oven to broil and transfer the cooked ribs to a baking sheet lined with foil.
- Brush the ribs with barbecue sauce and broil for about 2 minutes until caramelized.
