Ingredients

The Ribs

  • 1 rack baby back ribs or spare ribs (about 1½ to 2 pounds)
  • 1 cup water
  • 3 tablespoons apple cider vinegar
  • ½ teaspoon liquid smoke
  • ¼ cup Homemade Barbecue Sauce or store-bought sauce, plus additional for serving

The Rub

  • 2 tablespoons brown sugar
  • 1 tablespoon paprika
  • 1 teaspoon ground black pepper
  • 1 teaspoon kosher salt
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¼ teaspoon cayenne pepper

Instructions

  1. Rinse the ribs and pat them dry, removing the membrane if present.
  2. Mix the dry rub ingredients in a bowl and coat the ribs generously.
  3. Place the trivet in the Instant Pot and add water, apple cider vinegar, and liquid smoke.
  4. Stand the ribs on the trivet, wrapping them around the pot if needed.
  5. Seal the Instant Pot and cook baby back ribs on high pressure for 23 minutes or spare ribs for 35 minutes.
  6. Allow the pressure to release naturally for 5 minutes for baby back ribs, or completely for spare ribs.
  7. Preheat the oven to broil and transfer the cooked ribs to a baking sheet lined with foil.
  8. Brush the ribs with barbecue sauce and broil for about 2 minutes until caramelized.
