Ingredients

The ribs

  • 3 pounds pork baby back ribs, cut in half
  • ¼ cup dry rub (store-bought or homemade)
  • 1 cup BBQ sauce (store-bought or homemade)

Homemade Dry Rub (Optional)

  • 1 teaspoon cumin
  • 2 tablespoons smoked paprika
  • teaspoons garlic powder
  • 1 teaspoon granulated onion
  • teaspoons salt
  • 1 pinch cayenne pepper
  • 1 teaspoon freshly cracked black pepper

Homemade BBQ Sauce (Optional)

  • 1 tablespoon avocado oil or refined coconut oil
  • 1 cup minced sweet onion
  • 1 tablespoon minced garlic
  • ¼ cup honey
  • 1 teaspoon cumin
  • 1 teaspoon mustard powder
  • 4 teaspoons smoked paprika
  • 1 6-ounce can tomato paste
  • ½ cup low-sodium chicken stock
  • ¼ cup apple cider vinegar

Instructions

  1. Prepare the ribs by removing the membrane from the back and seasoning with the dry rub.
  2. If making homemade BBQ sauce, sauté onions and garlic in the Instant Pot, then add remaining sauce ingredients and mix well.
  3. Place the seasoned ribs in the Instant Pot, securing the lid and setting the valve to sealing.
  4. Cook on Manual High Pressure for 40 minutes, then quick-release the pressure.
  5. Preheat the broiler and transfer the ribs to a baking sheet.
  6. Broil the ribs for 1 to 3 minutes until browned.
  7. Serve the ribs with the BBQ sauce.
