Instructions
- Preheat the broiler and position the rack 8 to 10 inches below the heating element.
- Place tomatillos, jalapeño, poblano, onion, and tomato on a baking sheet and spread them out.
- Broil the ingredients, turning occasionally, until they are blistered and charred.
- Remove the baking sheet and let the ingredients cool slightly.
- Remove the stem, seeds, and ribs from the poblano and jalapeño peppers.
- In a food processor, combine the roasted ingredients with garlic, cilantro, vinegar, and salt.
- Pulse until the mixture is mostly uniform in size, adjusting salt and cilantro to taste.
- Transfer the salsa to a serving bowl or refrigerate until ready to serve.
