Roasted Tomatillo Salsa

Ingredients

  • 1 ½ pounds tomatillos
  • 1 medium jalapeño pepper
  • 1 medium poblano pepper
  • ½ medium white onion
  • 1 medium roma tomato
  • 2 cloves garlic
  • ¼ cup chopped fresh cilantro
  • 1 ½ teaspoons white vinegar
  • ½ teaspoon salt

Instructions

  1. Preheat the broiler and position the rack 8 to 10 inches below the heating element.
  2. Place tomatillos, jalapeño, poblano, onion, and tomato on a baking sheet and spread them out.
  3. Broil the ingredients, turning occasionally, until they are blistered and charred.
  4. Remove the baking sheet and let the ingredients cool slightly.
  5. Remove the stem, seeds, and ribs from the poblano and jalapeño peppers.
  6. In a food processor, combine the roasted ingredients with garlic, cilantro, vinegar, and salt.
  7. Pulse until the mixture is mostly uniform in size, adjusting salt and cilantro to taste.
  8. Transfer the salsa to a serving bowl or refrigerate until ready to serve.
