Ingredients

  • lbs tomatillos
  • ½ cup white onion
  • ¾ cup cilantro (leaves only)
  • 1 tablespoon lime juice (freshly squeezed)
  • 1 unit jalapeño (seeded and roughly chopped)

Instructions

  1. Preheat the broiler on high.
  2. Peel and discard the husks from the tomatillos, rinse them, and cut them in half.
  3. Place the tomatillos cut side down on a foil or parchment lined baking sheet and broil for 5 to 7 minutes until the skin is lightly blackened.
  4. Puree the broiled tomatillos with the onion, cilantro, lime juice, and jalapeño using a food processor, blender, or hand immersion blender until finely chopped and mixed.
  5. Cool the salsa in the refrigerator until ready to serve.
