Tomatillo Salsa Verde

Instructions
- Preheat the oven to broil and set the oven rack to its highest level.
- Slice the tomatillos in half and arrange them cut-side down on a baking sheet.
- Slice the jalapeno in half lengthwise and place it cut-side down on the pan.
- Broil the vegetables for about 8 minutes until the tops are charred.
- Transfer the cooked vegetables and any juices to a food processor.
- Add the fresh cilantro and ¼ cup of water, then process until smooth.
- Add the onion, salt, and black pepper, then process again.
- Taste the salsa and add lime juice if desired.
- Transfer the salsa to a mason jar and chill in the fridge for at least 2 hours before serving.
