Tomatillo Salsa Verde

Ingredients

  • 1 pound tomatillos, husks removed
  • 1 unit jalapeno
  • ¼ cup fresh cilantro
  • ¼ cup chopped white onion
  • 1 tablespoon fresh lime juice (optional)
  • to taste unit sea salt & black pepper

Instructions

  1. Preheat the oven to broil and set the oven rack to its highest level.
  2. Slice the tomatillos in half and arrange them cut-side down on a baking sheet.
  3. Slice the jalapeno in half lengthwise and place it cut-side down on the pan.
  4. Broil the vegetables for about 8 minutes until the tops are charred.
  5. Transfer the cooked vegetables and any juices to a food processor.
  6. Add the fresh cilantro and ¼ cup of water, then process until smooth.
  7. Add the onion, salt, and black pepper, then process again.
  8. Taste the salsa and add lime juice if desired.
  9. Transfer the salsa to a mason jar and chill in the fridge for at least 2 hours before serving.
