Salsa Verde (Tomatillo Salsa)

Ingredients

  • 1 lb Tomatillos (husks removed)
  • 1 medium Jalapeno
  • 2 cloves Garlic (whole, peeled)
  • 1 tbsp Olive oil
  • cup Fresh cilantro
  • ¼ cup Onion (finely chopped)
  • ½ tbsp Lime juice
  • 1 tsp Sea salt (to taste)

Instructions

  1. Preheat the oven to 450°F (232°C) and line a baking sheet with foil.
  2. Arrange the tomatillos, jalapeno, and garlic on the baking sheet and drizzle with olive oil.
  3. Roast for about 10 minutes, then flip and roast for another 5 to 10 minutes until soft and browned.
  4. Let the roasted vegetables cool to room temperature.
  5. Transfer the tomatillos, jalapeno (remove the stem), and garlic to a food processor.
  6. Add cilantro, onion, lime juice, and sea salt, then pulse until you reach the desired consistency.
  7. Taste and adjust salt if needed.
