Salsa Verde

Ingredients

  • 1 lb Tomatillos, husked, rinsed and quartered
  • ½ bunch Cilantro, leaves and tender stems
  • 1–2 pieces Fresh green chili peppers (jalapeno or serrano)
  • 1 small clove Fresh garlic
  • cup Diced white or yellow onion
  • 3 tablespoons Fresh lime juice
  • ½ teaspoon Ground coriander
  • ½ teaspoon Sugar
  • 1 teaspoon Kosher salt
  • 1 tablespoon Olive oil (optional)

Instructions

  1. Rinse the tomatillos in warm water to remove the sticky film, then cut and quarter them.
  2. Combine the tomatillos, cilantro, onion, garlic, chilies, lime juice, and seasonings in a food processor and pulse until mixed.
  3. Taste and adjust salt, heat, and lime juice as needed.
  4. Refrigerate until ready to serve.
