Tomatillo Salsa Verde

Ingredients

The salsa

  • 9 medium tomatillos
  • 1 small yellow onion
  • 1 to 2 peppers serrano or jalapeño
  • 4 cloves garlic
  • 2 tablespoons avocado oil
  • 2 tablespoons fresh lime juice
  • ½ cup chopped fresh cilantro
  • teaspoons sea salt

For serving

  • to taste tortilla chips

Instructions

  1. Preheat the oven to 450°F and line a baking sheet with parchment paper.
  2. Remove the husks from the tomatillos, rinse them, and pat dry. Place them on the baking sheet with the onion and peppers.
  3. Drizzle the veggies with avocado oil, sprinkle with salt, and toss to coat. Wrap the garlic in foil with oil and add it to the baking sheet.
  4. Roast for 15 to 20 minutes until the tomatillos are juicy and browned.
  5. Remove the garlic from the foil, peel it, and remove the stems from the peppers.
  6. In a food processor, combine the tomatillos, onion, peppers, garlic, avocado oil, lime juice, cilantro, and salt. Process until combined.
  7. If the salsa is too thick, add water, 1 tablespoon at a time, to reach desired consistency. Adjust seasoning to taste.
