Avocado Salsa Verde

Avocado (pitted and flesh scooped out)
Instructions
- Preheat the oven to 450°F (232°C) and line a baking sheet with foil.
- Arrange the tomatillos, jalapeno, and garlic on the baking sheet and drizzle with olive oil.
- Roast for about 10 minutes until the tomatillos are browned on the bottom, then flip and roast for another 5 to 10 minutes until soft and puckered.
- Allow the roasted vegetables to cool to room temperature.
- Transfer the cooled vegetables to a food processor, add avocado, cilantro, onion, lime juice, and sea salt.
- Pulse until the desired consistency is reached, adjusting salt to taste.
