Avocado Salsa Verde

Ingredients

  • 2 pounds tomatillos
  • 1 lime juice
  • 1 heaping teaspoon kosher salt
  • 4 cloves garlic
  • 1 English cucumber
  • 1 medium onion
  • 1 jalapeño pepper seeds and white membranes removed
  • 1 cup chopped cilantro
  • 2 avocados pitted and cubed

Instructions

  1. Remove the husks from the tomatillos and wash them.
  2. Slice the tomatillos in half and place in the blender.
  3. Add lime juice, salt, and garlic to the blender and blend until puréed.
  4. Transfer the mixture to a large food storage container.
  5. Cut the cucumber into 2" chunks, pulse in the blender to chop, and add to the tomatillo mixture.
  6. Cut the onion into 2" chunks, pulse to chop, and add to the tomatillo mixture.
  7. Mince the jalapeño and add it along with chopped cilantro to the salsa, then stir to combine.
  8. Cube the avocado, add it to the salsa, and gently stir to ensure the avocado is covered.
  9. Cover and refrigerate for at least 1 hour before serving.
