Homemade Salsa Verde

Ingredients

The salsa

  • 1 ½ pounds tomatillos
  • 1 to 2 medium jalapeños
  • ½ cup chopped white onion
  • ¼ cup packed fresh cilantro leaves
  • 2 tablespoons lime juice
  • ½ to 1 teaspoon salt

Optional variation

  • 1 to 2 diced avocados

Instructions

  1. Preheat the broiler with a rack about 4 inches below the heat source.
  2. Place the tomatillos and jalapeño(s) on a baking sheet and broil until blackened, about 5 minutes.
  3. Flip the tomatillos and jalapeño(s) and broil for an additional 4 to 6 minutes until blistered.
  4. In a food processor, combine chopped onion, cilantro, lime juice, and salt.
  5. Transfer the roasted tomatillos and jalapeño(s) to the food processor and pulse until mostly smooth.
  6. Adjust seasoning with more lime juice and salt as needed.
  7. For creamy avocado salsa, let cool and blend in diced avocados.
