Tomatillo Salsa

chopped tomatillos, husks removed

diced onion

diced green chili pepper

diced sweet red pepper

cumin

vinegar

lime juice
Instructions
- Combine all ingredients in a medium pot.
- Bring the mixture to a boil and then simmer uncovered for 10 minutes.
- If canning, heat 3 half-pint jars with hot water, empty them, and fill with hot salsa.
- Process jars in a boiling water bath for 15 minutes if canning.
- If not canning, refrigerate the salsa until ready to serve.
