Fiery Fruit & Quinoa Salad

Ingredients

Chia Chipotle Dressing

  • ½ cup freshly squeezed or store-bought orange juice
  • 3 tablespoons freshly squeezed lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon chopped chipotle chiles in adobo sauce
  • 2 teaspoons agave nectar
  • 1 tablespoon chia seeds
  • 1 clove garlic minced
  • ½ teaspoon ground cumin
  • ½ teaspoon salt

Salad

  • 2 cups cooked chilled red or confetti quinoa
  • 1 cup cooked black beans drained and rinsed
  • 1 cup lightly packed chopped flat-leaf parsley or cilantro
  • ½ cup lightly packed chiffonaded fresh basil leaves
  • 1 large red onion sliced into rings
  • 3 large firm peaches or nectarines, halved and pitted
  • 3 ears corn husks and corn silk removed
  • 1 tablespoon olive oil
  • to taste salt
  • ½ cup toasted pumpkin seeds

Instructions

  1. Whisk together all dressing ingredients and chill for 10 minutes or overnight.
  2. In a large mixing bowl, combine quinoa, beans, and fresh herbs; keep chilled.
  3. Preheat a grill pan or outdoor grill.
  4. Rub fruits and veggies with olive oil and sprinkle with salt.
  5. Grill onions for about 3 minutes, then set aside.
  6. Grill peaches for about 2 minutes on each side, then set aside.
  7. Grill corn until lightly charred, about 3 to 4 minutes, then cool slightly and dice.
  8. Combine grilled fruits and veggies with the quinoa mixture, add pumpkin seeds, and toss with dressing.
  9. Serve at room temperature or chilled.
