Fiery Fruit & Quinoa Salad

Salad

cooked chilled red or confetti quinoa

cooked black beans drained and rinsed

lightly packed chopped flat-leaf parsley or cilantro

lightly packed chiffonaded fresh basil leaves

red onion sliced into rings

firm peaches or nectarines, halved and pitted

corn husks and corn silk removed

Instructions
- Whisk together all dressing ingredients and chill for 10 minutes or overnight.
- In a large mixing bowl, combine quinoa, beans, and fresh herbs; keep chilled.
- Preheat a grill pan or outdoor grill.
- Rub fruits and veggies with olive oil and sprinkle with salt.
- Grill onions for about 3 minutes, then set aside.
- Grill peaches for about 2 minutes on each side, then set aside.
- Grill corn until lightly charred, about 3 to 4 minutes, then cool slightly and dice.
- Combine grilled fruits and veggies with the quinoa mixture, add pumpkin seeds, and toss with dressing.
- Serve at room temperature or chilled.
