Quinoa Stone Fruit Salad

Ingredients

  • 3 cups quinoa, cooked
  • 1 tablespoon agave nectar or maple syrup
  • Juice of one lime lime
  • 1 whole peach, pit removed and sliced
  • 1 whole plum, pit removed and sliced
  • 1/3 cup grapes, sliced
  • ¼ cup chopped pecans
  • ¼ cup almond feta or tofu feta
  • to taste basil, for garnish

Instructions

  1. Cook the quinoa according to package instructions.
  2. While the quinoa is cooking, slice the peach and plum and set them aside.
  3. Once the quinoa is cooked, drizzle in the agave nectar and lime juice, then stir and fluff together.
  4. Add in the sliced fruit, grapes, pecans, and feta, and stir to combine.
  5. Garnish with basil and serve.
