Ingredients

The salad

  • ¾ cup dry quinoa
  • 16 ounces fresh strawberries
  • 9 ounces fresh blueberries
  • ½ cup toasted sliced almonds
  • ¼ cup fresh mint leaves, julienned

The dressing

  • 2 tablespoons honey
  • 2 tablespoons lime juice
  • ¼ teaspoon kosher salt

Instructions

  1. Prepare quinoa according to package directions and let it cool slightly.
  2. In a small bowl, mix together honey, lime juice, and salt for the dressing.
  3. Trim and quarter the strawberries, then add them to the quinoa along with blueberries, almonds, and mint.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Chill in the refrigerator until ready to serve.
