High Protein Quinoa Almond Berry Salad

Ingredients

The salad

  • ¾ cup dry quinoa
  • 1 pint strawberries, sliced
  • 16 oz fresh blueberries
  • 1 cup cherries, pitted and sliced
  • ½ cup almonds, chopped

The dressing

  • 2 tbsp pure maple syrup
  • 1 tsp balsamic vinegar
  • 1 tbsp fresh lime juice
  • 1 pinch kosher salt

Instructions

  1. Cook the quinoa according to package directions.
  2. Chop the fruit and place it in a large bowl.
  3. Mix the dressing ingredients in a small jar and adjust to taste.
  4. Fluff the cooked quinoa and add it to the bowl with the fruit.
  5. Combine everything and pour on the dressing, mixing well.
  6. Serve immediately or chill in the fridge until serving.
