Ingredients

The salad

  • 1 cup white quinoa, uncooked
  • 2 cups water
  • 4 cups raw kale, deboned and chopped
  • 1 tablespoon olive oil
  • 1 pint fresh strawberries, sliced
  • 1 large cucumber, chunked
  • ½ cup minced red onion
  • ½ cup chopped fresh basil
  • 4 oz. feta crumbles
  • 1 bag Salad Pizazz Salad Topper

The dressing

  • 3 tablespoons hummus
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons maple syrup
  • 1 tablespoon lemon juice
  • 1 teaspoon minced garlic
  • ¼ teaspoon salt

Instructions

  1. Cook quinoa in water by bringing to a boil, then simmering covered until fully cooked.
  2. Let quinoa cool for at least 15 minutes.
  3. Prepare the dressing by whisking together all dressing ingredients in a bowl.
  4. Massage kale with olive oil in a large salad bowl until it brightens and softens.
  5. Add strawberries, cucumber, onion, basil, and feta to the kale and toss.
  6. Incorporate the cooled quinoa into the salad and mix well.
  7. Add the Salad Pizazz and toss again.
  8. Drizzle the dressing over the salad and toss to coat.
  9. Chill the salad in the refrigerator before serving.
