Ingredients

The salad

  • 3 cups cooked quinoa
  • 1 lb sliced fresh strawberries
  • 1 cup fresh arugula
  • 2 oz crumbled goat cheese
  • 1-2 tablespoons minced fresh basil
  • ΒΌ cup sliced almonds

The dressing

  • 1 tablespoon olive oil
  • 1 tablespoon fresh squeezed orange juice
  • 1 tablespoon fresh squeezed lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey

Instructions

  1. Toast the sliced almonds in a skillet over medium heat until golden, then set aside to cool.
  2. Mix olive oil, orange juice, lemon juice, apple cider vinegar, and honey in a small bowl until combined.
  3. In a large bowl, combine quinoa, strawberries, basil, toasted almonds, goat cheese, and arugula.
  4. Pour the dressing over the salad and mix until evenly coated.
  5. Serve at room temperature or chilled.
