Ingredients

The salad

  • 2 cups cooked quinoa
  • 1 heaping cup blackberries
  • 1 heaping cup blueberries
  • 1 heaping cup raspberries
  • 1 cup baby spinach
  • ½ cup chopped basil
  • ½ cup gorgonzola cheese
  • ½ cup sunflower seeds

The dressing

  • 2 Tablespoons olive oil
  • 2 Tablespoons lemon juice
  • 1 Tablespoon honey
  • 1 pinch salt

Instructions

  1. Combine all salad ingredients in a large bowl.
  2. Whisk together the dressing ingredients and toss with the salad.
  3. Cover and refrigerate for up to 1 week, enjoying best on days 2 or 3.
