Detox Berry Quinoa Spinach Salad

Ingredients

Dressing

  • ¼ cup shallots, diced
  • 1 teaspoon olive oil
  • 1 teaspoon dry basil
  • 1 tablespoon honey
  • ¼ cup red wine vinegar
  • ½ cup olive oil
  • to taste salt & pepper

Salad Ingredients

  • 10 oz. baby spinach
  • 4 oz. crumbled goat cheese
  • 1 pint blackberries
  • 1 pint strawberries, hulled and quartered
  • 1 cup raw pecans
  • 1 cup cooked quinoa

Instructions

  1. Heat a small sauté pan over medium-high heat and add olive oil and diced shallots.
  2. Sauté for 4-5 minutes until translucent and set aside.
  3. In a small bowl, combine dry basil, honey, red wine vinegar, salt, and pepper, and whisk together.
  4. Add the sautéed shallots and slowly pour in olive oil while whisking.
  5. Evenly distribute spinach, strawberries, blackberries, quinoa, pecans, and goat cheese between 4-5 plates.
  6. Drizzle the vinaigrette over each salad and serve.
