Instructions
- Make the Sweet and Sour Sauce by toasting the red pepper flakes in a saucepan, then adding maple syrup, coconut palm sugar, vinegar, and salt, cooking until the sugar dissolves, and stirring in garlic before allowing to cool.
- Combine the Sweet and Sour Sauce with lime juice and soy sauce to make the dressing.
- In a large bowl, mix the orange, apple, shallot, roasted red pepper, grapes, arugula, and quinoa, then toss with half of the dressing.
- Sprinkle with cashews and serve, drizzling additional dressing if desired.
