Ingredients

The salad

  • 1 orange, peeled and segmented
  • 1 granny smith apple, cored and chopped
  • 1 tablespoon lemon juice
  • 1 shallot, chopped
  • 1 roasted red pepper, chopped
  • 1 cup seedless grapes, halved
  • 1 cup arugula, chopped
  • 2 cups cooked quinoa
  • ¼ cup cashews, chopped

Sweet and Sour Sauce

  • 1 ½ teaspoons crushed red pepper flakes
  • ¼ cup maple syrup
  • ¼ cup coconut palm sugar
  • cup rice vinegar
  • ½ teaspoon sea salt
  • 8 cloves garlic, minced

Dressing

  • ½ cup Sweet and Sour Sauce
  • 2 tablespoons fresh lime juice
  • 1 tablespoon soy sauce or gluten free tamari

Instructions

  1. Make the Sweet and Sour Sauce by toasting the red pepper flakes in a saucepan, then adding maple syrup, coconut palm sugar, vinegar, and salt, cooking until the sugar dissolves, and stirring in garlic before allowing to cool.
  2. Combine the Sweet and Sour Sauce with lime juice and soy sauce to make the dressing.
  3. In a large bowl, mix the orange, apple, shallot, roasted red pepper, grapes, arugula, and quinoa, then toss with half of the dressing.
  4. Sprinkle with cashews and serve, drizzling additional dressing if desired.
