Instructions
- 1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
- 2. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
- 3. In a large mixing bowl, cream the butter and sugars until smooth.
- 4. Add the egg and vanilla extract, then mix in the shredded zucchini.
- 5. Gradually add the flour mixture until just combined.
- 6. Stir in the oats, chocolate chips, and dried cranberries.
- 7. Drop tablespoonfuls of dough onto the prepared baking sheets, spacing them 2 inches apart.
- 8. Bake for 15 minutes or until golden, then cool completely on wire racks.
