Ingredients

The bread

  • 1 ¾ cups shredded zucchini
  • ¾ cup packed light-brown sugar
  • 2 tablespoons granulated sugar
  • cup canola oil
  • cup applesauce
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • ¾ cup all-purpose flour
  • ¾ cup whole wheat flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 ½ teaspoons ground cinnamon
  • 1/8 teaspoon ground cloves
  • ¾ teaspoon salt
  • ½-¾ cup dried cranberries

Topping

  • to taste cinnamon/sugar mixture

Instructions

  1. 1. Preheat the oven to 350°F and prepare a loaf pan with cooking spray.
  2. 2. Grate the zucchini and set it aside.
  3. 3. In a large bowl, mix the sugars, oil, applesauce, vanilla, and eggs.
  4. 4. In a separate bowl, sift together the flours, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
  5. 5. Combine the flour mixture with the egg mixture, then stir in the grated zucchini and dried cranberries.
  6. 6. Pour the batter into the prepared pan and sprinkle with cinnamon/sugar if desired.
  7. 7. Bake for 40-45 minutes until a toothpick comes out clean. Cool before slicing.
