Instructions
- 1. Preheat the oven to 350°F and prepare a loaf pan with cooking spray.
- 2. Grate the zucchini and set it aside.
- 3. In a large bowl, mix the sugars, oil, applesauce, vanilla, and eggs.
- 4. In a separate bowl, sift together the flours, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
- 5. Combine the flour mixture with the egg mixture, then stir in the grated zucchini and dried cranberries.
- 6. Pour the batter into the prepared pan and sprinkle with cinnamon/sugar if desired.
- 7. Bake for 40-45 minutes until a toothpick comes out clean. Cool before slicing.
