Teriyaki Shrimp

Ingredients

The sauce

  • Tbsp soy sauce
  • 3 Tbsp mirin
  • 3 Tbsp water
  • 3 Tbsp honey
  • 1 Tbsp rice vinegar
  • ½ tsp sesame oil
  • 1 tsp sriracha
  • tsp minced garlic
  • tsp peeled and minced ginger
  • 2 tsp cornstarch

The shrimp

  • lbs extra large shrimp, peeled and deveined
  • 1 Tbsp olive oil or vegetable oil
  • 2 Tbsp thinly sliced green onions (optional)

Instructions

  1. Whisk together the sauce ingredients in a bowl until the cornstarch is dissolved.
  2. Heat oil in a skillet over medium-high heat.
  3. Add shrimp in a single layer and cook for 1½ minutes.
  4. Quickly turn the shrimp and cook for another 30 seconds.
  5. Whisk the sauce again and pour it into the skillet with the shrimp.
  6. Cook and stir for about 1 minute until the shrimp are cooked through and the sauce thickens.
  7. Serve immediately, garnished with green onions if desired.
