Teriyaki Sauce

Ingredients

  • ½ cup soy sauce
  • ½ cup granulated sugar
  • ¼ cup water
  • 2 tablespoons mirin
  • 2 teaspoons fresh ginger, grated
  • 1 clove garlic, minced
  • ¼ teaspoon red chili flakes
  • 2 teaspoons cornstarch

Instructions

  1. Combine soy sauce, sugar, water, mirin, ginger, garlic, and red pepper flakes in a small saucepan.
  2. Bring the mixture to a boil, then reduce heat to medium and simmer.
  3. In a small bowl, mix 2 tablespoons of the teriyaki sauce with cornstarch to create a slurry.
  4. Return the slurry to the saucepan and continue simmering until the sauce thickens, about 5 to 8 minutes.
  5. Remove from heat and cool to room temperature, or refrigerate for up to one week.
