Homemade Teriyaki Sauce

fresh ginger, peeled and finely grated
Instructions
- In a saucepan over medium heat, whisk together the soy sauce, water, mirin, brown sugar, kosher salt, garlic, and ginger.
- Bring the mixture to a simmer, then reduce the heat to low and allow it to reduce for 10 minutes.
- Transfer the sauce to a small bowl; it will thicken as it cools.
- If a thicker sauce is desired, mix a tablespoon of the sauce with a teaspoon of cornstarch in a small bowl until dissolved, then add it back to the sauce and whisk until combined.
- Store the sauce in an airtight container in the fridge for up to 2 weeks.
