Homemade Teriyaki Sauce

Ingredients

  • ¾ cup soy sauce
  • ¼ cup water
  • 2 tablespoons mirin
  • ½ cup brown sugar
  • a pinch kosher salt
  • 2 cloves garlic, peeled and finely grated
  • 2 teaspoons fresh ginger, peeled and finely grated

Instructions

  1. In a saucepan over medium heat, whisk together the soy sauce, water, mirin, brown sugar, kosher salt, garlic, and ginger.
  2. Bring the mixture to a simmer, then reduce the heat to low and allow it to reduce for 10 minutes.
  3. Transfer the sauce to a small bowl; it will thicken as it cools.
  4. If a thicker sauce is desired, mix a tablespoon of the sauce with a teaspoon of cornstarch in a small bowl until dissolved, then add it back to the sauce and whisk until combined.
  5. Store the sauce in an airtight container in the fridge for up to 2 weeks.
