Teriyaki Shrimp Stir Fry

Ingredients

The stir fry

  • 1 ¼ lbs large shrimp, peeled and deveined
  • 3 cups mixed vegetables
  • to taste salt
  • to taste black pepper
  • 2 tablespoons vegetable oil
  • optional garnishes: sliced green onions and sesame seeds

The sauce

  • ¼ cup soy sauce
  • ½ cup water
  • 3 tablespoons brown sugar
  • 2 teaspoons minced garlic
  • 2 teaspoons minced ginger
  • 1 tablespoon honey
  • 1 teaspoon toasted sesame oil
  • 1 tablespoon + 1 teaspoon cornstarch

Instructions

  1. Combine the sauce ingredients in a small pot and heat until the sugar dissolves.
  2. Increase the heat and bring the sauce to a boil.
  3. Mix cornstarch with cold water, then add to the sauce and boil until thickened.
  4. Set the sauce aside.
  5. Heat oil in a large pan and cook the vegetables until tender.
  6. Remove the vegetables and cook the shrimp in the same pan until pink and opaque.
  7. Return the vegetables to the pan and pour the sauce over everything.
  8. Cook until warmed through and serve with optional garnishes.
